How do I modify the category fields.

I am testing and learning about your product and have a simple question. When you create a person, organization, ad, etc., there is a dropdown list - category or similar field. How do I update these lists to remove inappropriate items and add more appropriate items geared to a particular audience - real estate. Thank You in Advance!
