  So you can have your profile as friends only but have your chat settings as receiving messages from anyone? Or does the profile setting also cover message settings

  There are no special option in Messenger to allow members to set another settings to contact with them then they have in profile's settings. So, Messenger is used the same contact settings as in profile settings.
