In Studio->Messenger->settings you can find option - Allow to show messages' views for Talks which contain maximum defined number of participants 

It allows to hide viewers' icons in chat where you have more then defined number of participants. If you set 0 then you will have no viewers in all chats. ShoutBox is public and usually there is more then 10 users.
