I got it, but "categories" is not available for all forms, for example I don't see it in Market modules for "products"? (where it would be nice to have users add their own categories)

  Yes, during the creation of the Market app the categories field hasn't been considered as necessary...

  Any chance that I can add it on my end? or is there another alternative that I can use that gives people their own way of creating sub-categories of products? @LeonidS

  You may use this manual https://github.com/unaio/una/wiki/Browseable-categories but in your case it is just easier to use hashtags or labels.
