It seems that has more to do with the link you’re sharing than how your embeds are set up. I’ve seen this happen with different links sharing to my community and also when sharing to Twitter. The website you’re embedding a link from probably doesn’t have SEO set up to display a picture for embed cards. See if it shows pictures when sharing a youtube link.
