First of all, you need to clerar the cache of your browser or visit the site iun the anonymouse mode. UNA tries to detect the language according to the browser settings first.

  Did all of the above and still default is English. In addition to changing in Polyglot, is there anything else I need to do?

  No, it is the only part which you could do on the UNA side.
