sign-up by phone number
Is it possible to change the sign-up options so that a phone number instead of an email address is mandatory & used. Our users do not have email addresses... only phone numbers.

Do you have a way to verify the phone numbers using SMS app? It needs subscription package with Phone provider, so that process can be used. There is custom Join module. Emails are universally unique and permanent thing. Phone numbers can be changed. So it's little risky to make users join by using phone numbers. Just my 2 cents. Other way is you can use Mobile Apps (IOS as well as Android) to make them join. No need of Mobile number in that case. As long as the App is on Phone, you have member who uses phone. It will also have Push notifications, so user can be engaged actively.

Yes, you can use just phone in UNA without email, but you need to wait for the next update 9.0.0-RC10, since it will be possible to login with phone number starting from 9.0.0-RC10, before 9.0.0-RC10 it possible to login with email or account ID only.
Also you will need to open Twilio account and enter Twilio settings in Studio > Settings > Twilio to be able to send verification SMS then change the following option Studio > Settings > Account > Account is confirmed when = phone is confirmed.
