Hello. Could you please describe how the problem can be reproduced step by step. I just tried to create a new Photo Contest on our Dev site and joined it by the author and another profiles without any problems. If you can provide us (via PM) with test profile on your site I'll check it directly there.

When I click on the Join button I get re-directed to a blank Error 500 Page

OK, I was able to reproduce the problem on your site. I saw the empty page (white screen) when I tried to join a contest. Usually it means that some PHP error appears on server end but Display Errors is disabled in PHP on your server. I need to enable it to be able to see the exact problem and fix it.
