I've got the memory set to 4gb. That should be plenty. I'm not familiar with php-fpm. Not sure where to start with that.

/etc/php/7.x/fpm/pool.d/www.conf (7.x changes to your PHP version)
for exampl:
pm = dynamic
pm.max_children = 50
pm.start_servers = 10
pm.min_spare_servers = 5
pm.max_spare_servers = 20
