Actually looking at things further, my test installation isn't updating at all. I hit the button and the site says "updated x minutes ago" in the dashboard, and Softaculous thinks that the installation is the most recent version, but the update doesn't occur, and the update log is empty too.
But it's probably not worth troubleshooting since it's an empty test site. I can always just reinstall. :P
If I hit update while in beta channel, should the site update just one release at a time instead of trying to update to the latest version? If so then I will try updating the community site. Thank you for your help!

2 things I did when I faced similar issue.
- increase your php limits.. max execution time, max memory etc.
- run the Cron tasks few times. Give few minutes before each call.
Few additional hints.
If you already had a failed attempt, you can try to just run the Cron tasks.
Sometimes it's better to do a restore to original state from the backups and try again from beginning.

OMG thank you! Lol have no idea what a Cron task is so as far as I got with that was looking it up in Cpanel and seeing the "you should have a clue about Linux" warning, which I don't - BUT after completing all of the previous steps the upgrade is working on my test installation. I think it was the PHP limits, I looked up a tutorial online and what my Cpanel said was super low in comparison to the screenshot in the tutorial. ^.^
