When you update channel in setting from 'beta' to 'stable' it means that you will not be able to update to beta and alpha releases, only when there is a stable release you will be able to update. If you are still on development stage it's better to use beta channel, since you will have latest features and fixes, as soon as your site in production, update your site to latest stable release (maybe you will need to wait) and keep to 'stable' channel.
