Sounds like a cron job issue. Go into Studio > Dashboard click the down arrow next to Host Tools and choose server audit.
Scroll down to Cron Job section and see when the last execution time was.

Chris is right here is a post from Alex T⚜️ from another thread hope this helps
Videos are processed by ffmpeg which is run every minute by cron, so please check
1) if ffmpeg is allowed to be run on your hosting
2) if UNA cron is setup properly - https://github.com/unaio/una/wiki/FAQ#10-how-una-cronjob-should-look-like-

go to dashboard within studio go to server audit scroll don to where it tells you your last cron job execution then click to send a test email to what ever email you will have access to and then tell me if it sends you a error report if it does send the subject of the message here along with the info contained within it
P.S. open tis image in a new tab to see it bigger

Did you ever get to the bottom of this??
I have the exact same problem.
FFmpeg execute permission & cron job looks fine in Dashboard but posts with video show "Update will be published as soon as video is converted" and never appear in the timeline. The video never appears and the post itself disappears when the page is refreshed.
I'm suspect this is a permissions issue somewhere.
