do you use RocketChat on your UNA installations? If so, how do you use it? I thought it could be used with that app of RocketChat, so you could offer a separate chat app to users. But turns out this does not work. So what is this RocketChat module good for?

I used to use it, it's like Discord or Facebook Messenger. My members didn't like it.
For one, it needs a real integration into the site. Need notifications on the site letting members know there are people in the chat rooms. Plus, at times upgrades break the chat due to not having updated dependencies on the server. ArrowChat may be a better solution but it isn't free but everything can't be free. There is an integration for UNA and ArrowChat in the marketplace.
I use OpenFire in another project and wondered if I could use it with UNA, too. I'd like to have a separate chat app for my users. OpenFire could deliver this. The server also delivers notifications quite well. Problem is, there seems to be no working OAuth solution for OpenFire.

Now it works with the RocketChat app on Android. It's still complicated, but it works. Still no push messages.
I do not seem to be able to get the Rocket Chat running. Correctly. Some can help me to find a step by step instructions, please? with my 60+yrs I seem to be lost here a little.

RocketChat requires to be installed at the root level. First determine what your OS is on the server and then go to rocket.chat and you can find detailed instructions for your OS on how to install it. You also need to set up a reverse proxy on your webserver; that can be tricky sometimes.
I don't like RocketChat; it works and then you do an upgrade and it won't bring in the avatars. What is needed is a native chat application but no one seems to be interested in writing one. It just needs to be a simple chat; maybe with webRTC audio/video chat, but applications like RocketChat are overkilled.
