I am currently running on an Apache2 Ubuntu Web server and everytime I get the HTTP 500 error, I go into my apache error log file by: sudo nano /var/log/apache2/error.log
It might be different if you use a different Web server. The error displayed in the log file will direct you to where the error can be fixed.

UPDATE: the reason was in the syntax error in the install/config.php of one of the non-Boonex apps.
