In the Studio->Settings->Contact you may find this option "Email address to receive messages (if empty, site's email will be used)".

  Can you not just change the contact form mail to address separately?

  Of course yes, as Leonid said, the address here is only for the form.
  If and only if you leave this field blank, then the site's email address will be used.
