Is there a guide where I can search how to configure analytics so users only see analytics of their content? Currently, it defaults so they see the analytics for all users. Thanks.
Look for the visibility settings within the block configuration options.

"users only see analytics of their content" - After reading all the available literature on analytics it appears to me this is a customization that we need to build that limits analytics to "author". We are going to give a try next week at building such a query.
Yes you could create a new page block or more customized if you have programming knowledge to make a sql query for your needs. The current analytics module is not very advanced.
