We are looking for where we can mobile configuration so that page layouts with grids don't default into a single column view. For example, gallery view on desktop on mobile stacks the results. How is that modified so it retains a gallery view on mobile
I can be done via the modification of the CSS styles (Designer->Injections or via the RAW blocks). But it isn't good idea to have the mobile design "like for the desktop" and changes may affect on every page's and block part.
Your request might seems viable and ideally, but based on view port settings and responsiveness will the blocks shift for readiness. Please share a screen dump for us to understand your required desire and display, who knows you might have a point, but as things stands, it's hard to say.
